He is based off of the Arravani, I decided, as Greece apparently had more native ponies than fullblown horses but given Chiron's build (the man is surprisingly stocky, ignore that almost delicate face), I think he'd need the frame of a very large horse to compensate for all of the body mass/muscle. The Arravani is also a workhorse and again, Chiron is a tank of a centaur. He big, and as a teacher, also has to be intellectually versatile in a way that is reflected in how the Arravani can do pretty much any job you throw at them.
However, the IC answer is he's not based off any horse because his origins are uh, unconventional, and on top of that he'd point out that centaurs aren't really horses to begin with, they are technically their own species. He would then proceed to tell someone the fuckin orgins of some random ass animals who look alike but actually aren't related at all to make his point, I'm exhausted already.
