DAUGHTER SHAPED except no, Chiron didn't ever consider Clementine a daughter, which sure is hilarious after reading her thoughts on him. It is for the same reason, too -- Clem made it clear she was a mother once he found out about AJ, and no matter her age, Chiron was not going to take that identity away from her. It wasn't completely uncommon in Greece, anyway, for there to be young girls taking care of kids; him being a ye olde made it very easy for him to consider her an adult more or less, even if she was still a child to him in the grand scheme of things (bc he's ancient).
But their shared parenthood is one of the reasons why Chiron enjoyed talking to Clem. Even if they never spoke for long, or very deeply about anything in particular, he enjoyed her straight-to-the-point mannerisms and found her deserving of his time. Chiron is far harder to impress than he lets on, but given Clementine's canon... the fact that she is alive and raising a child in those conditions is just. staggering to him. His heart really went out to her.
ALSO I LAUGH AT CLEM FEELING LIKE HE DIDN'T OFFER MUCH OF HIMSELF IN CONVERSATION because she's. not wrong. Part of it is that he enters most conversations like a professor taking questions after a presentation -- you will get an honest answer, and he's very reassured and kind, but there's still going to be something oddly standoffish about it. Also, Chiron is so used to people knowing about his lore that he forgets to say anything about himself. And then adding in that Chiron was pretty cautious himself about sharing information. BASICALLY CLEM IS COMPLETELY VALID.
But yes, even upon finding out that Clem had lied during the Bunny Meeting and had also given out his team, Chiron honestly wasn't angry. He thought her very clever to get the jump on him, as he had been so cautious most of the game (and ironically, him hunting down roles meant he was less interested in hunting down teams, so that's another reason he just let it slide). If anything, her caution and sneakiness proved that their team would be further protected, despite them already knowing at that point it was all a numbers game.
Which leads nicely into that moment when Clem asked him to let Jeanne be caught during trial. The funny thing is Chiron already knew about the Knight role; he knew there would be a way for Jeanne to live if the pieces fell correctly. So poor Clem kinda outed herself as having a role to him (he'd been narrowing it down to her or Hilda) -- BUT Chiron also knew the limitations of that role, that shit could go sour, that there could be a lot of unforeseen complications. And more than that, even if he knew about the Knight role, she was still asking him to momentarily betray someone whom Chiron more or less saw as his comrade/boss. That is such a tall order for a Heroic Servant.
But due to all of that previous acknowledgement of seeing Clem as an adult, a mother, a person who knew how to take responsibility, and someone who could be clever for both selfish gain and the greater good, he decided to trust her and hopefully encourage the other Rabbits to get in on the plan, too. Yeah, Jeanne ended up murdering anyway, but seeing their team come together and pull it all off was such a highlight to him. He was so very proud of their efforts and especially hers.
... Lol and then next week it was Rabbit Team's turn to suffer. Even after coming back from the dead (and he was dead for what, a week?), hearing Clem's desire to save Chiron because she was tired and upset at how her team was being picked on really did move his heart. He understood the number game aspect to it, but that's also when his character arc had hit its peak, and he acknowledged that he would have also been happy to live. So knowing that if he had spoken up about it and Clem likely would have backed him up made Chiron extremely fond of her in the end.

A good mom.
